Kale + Quinoa + Mushroom





serves 2-3
as a main


1/2 bunch kale - chopped 
1 tbsp olive oil
2 cups mushrooms - sliced
1 garlic clove
s + p
2 tbsp red wine vinegar

fry garlic in oil 
‘til fragrant.
add kale, mushies, 
Vinegar & s + P

when tender
combine with

1 cup of cooked quinoa
1/4 cup sultanas
crumbled goats cheese

divide
+
serve
