1 1/2 cups spelt flour
1 teaspoon baking powder
1/2 teaspoon baking soda
1/2 cup chopped macadmia nuts
Salt
1/3 cup honey
1/3 cup oil
1 egg
1/3 cup orange juice
1 tBSP vanilla extract
Preheat oven to 165﹉c.
Mix dry ingredients, mix wet ingredients, then fold the two together.
Fashion into balls and place 3cm apart on a lined cookie sheet. Press down slightly on each one with a fork.
Bake for 20 mins or until golden brown. Eat as is or slice them in half and add some coconut vanilla icing for an extra special treat.
TIP: add the juice of 1/2 an orange to the icing recipe for even more citrus zing!
